Azienda Agricola COS was founded in 1980 by three friends: Giambattista Cilia, Cirino Strange and Giusto Occhipinti. The acronym of their surnames (Cilia-Occhipinti-Strange) gives rise to the company's name. What started on a shoe-string budget has now turned into a cult-like success story.

Nero d'Avola is "the most important red wine grape in Sicily" and is one of Italy's most important indigenous varieties. It is named after Avola in the far south of Sicily, and its wines are compared to New World Shirazes, with sweet tannins and plum or peppery flavours.

We are at the farthest end of southeastern Italy.
The taste of Africa jumps out at you not just from the various architectural ruins but also more importantly from the vegetation: olive, carob and almond trees and vines abound. The climate as well recalls Africa with its red, ochre and yellow tones.
Viticulture
The difference in altitude from the typical hilly area of Ragusa, causes milder temperatures, with a distinctly Mediterranean climate. Medium consistency, from sub-Appennine sands, of pliocenica origin and with limestone and silicius nature from fresh and compact clay layers and tufa limestone.
