About the Producer

A fifth-generation Burgundian wine producer

Domaine Corsin has established an excellent reputation for making wines in Saint Véran and Pouilly-Fuissé since 1864. They were among the first to label the wines as Pouilly-Fuissé and Mâcon blanc. Joseph Jacquet, the founder of the domaine, had only two hectares of Chardonnay when he started making wine. In 1971, with the advent of the Saint Véran appellation, Joseph’s grandson André acquired new vineyards in Davayé and Pouilly-Fuissé. His two sons, Jean-Jacques and Gilles, subsequently joined him in the family business. Today, the domaine, now in its fifth generation, owns 13.6 hectares of Chardonnay in the Mâconnais.

  • Grapes

    100% Chardonnay

    Chardonnay is a white grape variety that is planted all over the world and loved for its versatility and ease of adapting to different terroirs. It is one of the key components of Champagne (along with Pinot Noir and Pinot Meunier) and can vary in style from crisp and lean Chablis (Northern Burgundy) to oaky, butter, full bodied Chard from California. It’s home is in Burgundy, however, and it is the predominant grape of Southern Burgundy (Mâcon).

    In Southern Burgundy, the vineyards of the Mâconnais cover almost 6000 hectares, between Tournus, Mâcon and Cluny, in the Saône-et-Loire. Most of the territory produces Mâcon-Villages. 

    The Chardonnay grape-variety thrives here on clay-limestone soils enriched by a variety of rocks, on the favourable sites and at altitudes which shape wines with great character and exceptional quality.

    Practising Organic 

     

    Exposed to the north-east, the Chardonnay wines are rooted in clay-limestone soils at an altitude of between 200 et 280 metres around the villages of Davayé and Solutré.

     

    Our Macon-Villages plot “Les Prés Cousins”,  is one of the oldest vineyards that have been exploited in Davayé.

    Average age of the vines: 25years.


    Planting density: 8500 plants per hectare.

  • A Moveable Feast

    We had a marvellous lunch from the hotel at Lyon, an excellent truffled roast chicken, delicious bread and white Mâcon wine and Scott was very happy when we drank the white Maconnais at each of our stops.

     

    At Mâcon I had bought four more bottles of excellent wine which I uncorked as we needed them.

Let's take a page out of Hemignway's book for this food & wine matching idea. After all he and Fitzgerald enjoyed their Mâcon with an "excellent truffled roast chicken." There are many recipes online for this dish if you have fresh truffles (lucky you!) if not, this particular one used truffle from a jar which can be found in most delis.
